Ingredients
  

Base + Filling

  • ½ cup Uncooked rice
  • 1 tbsp Olive oil
  • ½ lb Lean ground beef (85–90%)
  • 1 tsp Chili powder
  • ½ tsp Cumin
  • ½ tsp Garlic powder
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • 1 cup Black beans (drained and rinsed)
  • ¾ cup Corn (drained)
  • ½ cup Salsa (mild or medium)

Toppings

  • 1-2 cups Chopped lettuce
  • ½ cup Diced tomatoes
  • ½ Avocado, sliced
  • ¼ cup Shredded cheese
  • 1 Lime, cut into wedges

Instructions
 

  • Cook the Rice

    Cook the rice first, following the package directions. Make sure it doesn't get clumpy and keep it warm by covering it. Fluff it with a fork.
  • Brown the Beef

    Put a large skillet over a medium-high heat stove and add olive oil. Now add the ground beef and break it into very small pieces as it cooks. Make sure no pink is left and stir until browned, about 5-7 minutes.
  • Add the Taco Flavor

    Sprinkle chili powder, garlic powder, salt, black pepper, and cumin, and stir well so the beef is coated perfectly. Cook it for 30 seconds, and it will smell bold and toasty.
  • Warm the Beans and Corn

    Add the drained and rinsed corn and black beans right into the skillet. Cook them for 2-3 minutes and keep stirring. Make sure you are not drying it out.
  • Make It Saucy

    To make it saucy and juicy, pour in salsa and stir again. Let it bubble for 1 minute.
  • Build the Bowls

    Take the rice and divide it into two bowls, and place the beef mixture on top. Add your toppings.
  • Finish and Serve

    Squeeze fresh lime over each bowl and serve warm.

Notes

Overall, this is a great dish for weeknights when you don't have much time, but you want to cook something filling and cozy. This meal comes with a filling flavor and rich taste. But you can prepare it in under 25 minutes only.
