- 6 oz Dry pasta (fettuccine, spaghetti, or linguine)
- 8 oz Mushrooms, sliced (cremini, button, or a mix)
- 2 tbsp Butter
- 1 tbsp Olive oil
- 1 Small shallot (or ¼ small onion), finely chopped
- 3 Cloves garlic, minced
- ½ cup Heavy cream (or half-and-half for a lighter sauce)
- ½ cup Grated Parmesan (plus more for topping)
- ½ tsp Salt (plus more for pasta water)
- ½ tsp Black pepper
- ½ tsp Italian seasoning (optional)
- 2–4 tbsp Reserved pasta water (to loosen the sauce)
- 1 tbsp Chopped parsley (optional, for a fresh finish)
- 1 tsp Lemon juice (optional, brightens the flavor)
Boil the pasta
Take water in a large pot and add a good pinch of salt, and put it to boil. Cook pasta until it's tender. Make sure to preserve ½ cup of pasta water before draining. Brown the mushrooms
Take a large skillet and heat it on medium-high. Add 1 tbsp butter and olive oil. Add sliced mushrooms in an even layer. Cook for 2-3 minutes without stirring. Then stir and cook until mushrooms appear golden. Add onion and garlic
Now lower the heat to medium and stir in chopped shallot or onion and cook them for 1 minute. Add garlic and cook 30 seconds more until it smells amazing. Make sure you don't let it burn. Make it creamy
Now pour in the cream and stir. Add salt and pepper. Add Italian seasoning if you are using it. Now let it gently simmer for 2-3 minutes. It will thicken a bit in that time. Add Parmesan for the sauce
Sprinkle the Parmesan and keep stirring until it looks smooth. If you feel the sauce is too thick, then add reserved pasta water 1 tbsp at a time until it looks good to you. Toss pasta with the sauce
Add your drained pasta to the skillet and toss it well. Do it properly, so that every strand gets coated. Now adjust the salt and pepper by tasting. Make sure to add a tiny squeeze of lemon juice if you want to make it brighter. Serve right away
